- 3 cups chicken or 3 cups vegetable stock
- 2 cups dried orecchiette (or similar maccaroni product)
- 2 tablespoons butter
- 2 tablespoons butter, softened
- 1 tablespoon olive oil
- 1⁄4 teaspoon dried oregano
- 1⁄4 teaspoon dried basil
- 1⁄4 teaspoon cracked red pepper
- 3 garlic cloves, minced
- 2 dashes onion powder
- 1⁄4 cup shredded parmesan cheese (or Gran Padano)
- 1⁄2 cup shredded fresh asiago cheese
- 1 cup shredded provolone cheese
- 1⁄2 tablespoon kosher salt
directions
- Bring Stock to a boil and Add 2 Tbsp Butter and Orecchiette. Boil until tender but not soft.
- Drain Stock and reserve one cup. Return Pasta to pot and reduce heat to low.
- Add herbs, remaining Butter, Oil, garlic and onion powder. Stir until well mixed.
- Slowly stir in cheese making sure to add a small amount of broth as needed to obtain a creamy consistency. This is a slow proess and can take up to 20 minutes.
- Stir in Salt and serve.
