  • 7 cups dashi
  • 1 teaspoon salt, to taste
  • 13 cup soy sauce
  • 2 teaspoons sugar
  • 2 tablespoons mirin
  • 3 drops concentrated soup flavoring, if desired (memmi)
  • rinsed cooked noodles, of choice (udon, soba, etc.)

  • In a large saucepan, combine all ingredients except memmi and noodles, and heat until hot but not boiling; remove from heat. Stir in memmi, if desired. To serve, pour 1 cup broth over noodles in each serving bowl.
