- 1 cup whole wheat flour
- 1 cup polenta
- 2 tablespoons sugar
- 2 1⁄2 teaspoons baking powder
- 2 teaspoons garlic powder
- 1 teaspoon paprika
- 3⁄4 teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- 1⁄4 cup olive oil
directions
- 1. In a bowl, mix flour, polenta, sugar, baking powder, salt, paprika and garlic powder. In another bowl, beat eggs to blend with buttermilk and 1/4 cup butter; pour into flour mixture. Stir batter until evenly moistened.
- 2. Scrape batter into a buttered 8-inch square pan and spread level.
- 3. Bake in a 400° oven until cornbread is browned, springs back when lightly pressed in the center, and begins to pull from pan sides, 20 to 25 minutes. Use hot or cool.

I'm an American vegetarian living in Switzerland. I used to visit this site for new ideas for lunch in the kindergarten where I worked. I've decided to join after having searched the internet for the french toast lasagna recipe I remember from teenage-hood and couldn't find it.
Having to adapt to the Swiss kitchen and finding fun recipes to make vegetarian has been fun for my cooking.
My favorite restaurant is my neighborhood Tibetan place: Shangrila. Mostly I like the sitting at a ig table with loved ones and sharing all the dishes with the lazy suan in the middle.
