Savory Pork & Apple Stir Fry

"Pork stir fry that is sweet and nutty, as well as cooked stove top for a "quick" dinner. Substitute with chicken, if desired."

  • Prepare the Rice a Roni, substituting 1 cup water and 1 cup apple juice for water on the boxed directions.
  • While this is cooking, cut the pork into strips and combine with paprika, thyme, sage/poultry seasoning.
  • In a second skillet, melt margarine or butter over medium heat and stir fry the pork for 3-4 minutes or until no longer pink.
  • Add apples, and stir fry for another 2-3 minutes or until apples are tender.
  • Combine the remaining 1/2 cup apple juice with the cornstarch and add to the pork, cooking 1-2 minutes or until thickened to a glaze.
  • Stir in nuts and serve over rice mixture.

  1. Very nice dish - I served it with a crisp green salad and everyone really enjoyed it. After reading cinderetta2002's review I decided to add ~1/4 tsp salt just before adding the apples in step 4. There's a lot of 'sweet' in this recipe, and that can make a meat dish taste flat unless you add a bit of salt. I also took mickie49's advice and added an onion with the pork - good call! I made basmati rice instead of Rice-a-Roni (it's what I had). And for the stir fry I used 1 Tbls butter and 1 Tbls oil. I used grape seed oil which has a pretty high smoke point and so stays relatively healthy when heated. (Btw, don't use margarine to cook. In fact, don't use it at all - partially hydrogenated fats are not healthy! And heating them just turns the unhydrogenated remainder into trans fat too!)
     
  2. This is a great combination of flavors and such an easily put together meal. I used ground pork which I sauteed with a minced onion and the spices. then proceeded as per above directions. Loved the apple/pork flavor combo! I used the rice pilaf flaor rice mix.
     
  3. This dish is tasty if you like pork and apple combinations, but I felt the meat didn't have much taste. Perhaps it should be marinated beforehand. Also serving it with Rice a Roni didn't make it better.

Welcome! I joined this website in 2001, as a new wife and Mom of a 1 y/o and I was 28 yrs old and did not know about cooking. I found this website cause I searched the web and wanted to find a good recipe for carrots! I found that recipe and so much more here over the years. I learned so much from this website and opened up my eyes to other recipes. I now am 46 y/o. I am now divorced and my then 1 y/o son is now a Marine. I have a wonderful man in my life that loves and appreciates my cooking and I thank this site for all of its help. I still come here for recipes.
