Ingredients Nutrition

  • 14 cup butter
  • 1 cup chopped onion
  • 1 (24 ounce) package Simply Potatoes Traditional Mashed Potatoes
  • 14 cup complete pancake and waffle mix
  • 2 eggs

Directions

  1. Melt butter in large skillet over medium-low heat. Add onion. Cook 10 minutes or until tender.
  2. Heat waffle iron according to manufacturer's instructions.
  3. Whisk eggs in large bowl. Stir in mashed potatoes and flour until evenly blended. Stir in onion and butter until blended.
  4. Spoon about 1/2 cup batter (depending on size of waffle iron) into center of waffle iron. Close lid and cook 4 minutes or until deep golden brown. Repeat to cook remaining waffles.
