Savory Roasted Baby Carrots

"These salty little morsels are better than french fries, IMHO. You can go a little heavier on any of the seasonings, to taste, sometimes I even add a touch of cayenne for those who like a *kick*-"

  • Toss the carrots with the olive oil, thoroughly coating all the carrots. Spread in a single layer on a baking sheet (I like to line mine with foil, makes for easy cleanup). Bake at 450 degrees Fahrenheit for 30 minutes, stirring them around every 10 minutes. The carrots will become browned and caramelized, and the littlest ones may get quite brown, I have found they are just as delicious (maybe the most delicious) and leave them alone :) After they are roasted, sprinkle with the seasonings, and toss together to distribute the seasonings evenly throughout.

  1. Great way to eat your carrots! I used regular carrots that I cut into smaller sections. Loved the spices thrown together. Will use this one again.

  2. Five starts!!Off the chart yumminess.I made a pork roast and needed to use up some carrots. The caramelization and the roasted spices were just amazing.I didnt have garlic powder on hand so I omitted the salt and used 3/4 tspn garlic salt.I think it was a great sub...basically the same.So far my favorite way for cooking carrots...much better than all those sweet sugar glazes that I am so tired of!I cant say enough!

  3. I made this as one of several side dishes with Italian Beef and roasted red pepper Sandwiches. It paired extremely well. Everyone's taste buds LOVED the delicate and unusual balance of spices which I measured precisely. Thanks for submitting!

My name is Jill. When I discovered Recipezaar, and that you can 'sort' recipes by 'rating' it really got my attention. I am building a collection of five star (rated by 100 or more users on this site) :) recipes. This is quite an improvement over frozen entrees from the microwave for lunch!!! I tell everyone I can about this site, so they can reap the benefits too!
