  • Mix all ingredients, adding zucchini last after other ingredients are well mixed.
  • Bake at 350F for 25 minutes in a greased 13x9x2-inch pan.

  1. If you think it is good fresh from the oven, you should try it cold from the refrigerator at two in the morning. UNBELIEVABLE!!!!!!!!!!!!
     
  2. First I'll confess to the changes I made. I only had low-fat bisquick and didn't have any season salt, so I tried to guess what's in season salt and added dashes of 5 different spices. I went with chipoltle tabasco and further cut the fat with 1/2&1/2 apple sauce and oil. And oops I grated the zucchini before reading to the end of the recipe... so my review is based on all these changes: It was more of a quiche than a bread, but quite yummy.
     
  3. Great recipe. Didn’t have Bisquick but used flour with addition of 1/2-1 tsp baking powder. Did not use the seasoned salt but added 1/4 of sharp cheddar, which has plenty of salt. Garlic powder instead of fresh. No hot sauce. I also found that you can cook this batter in a cast iron skillet to make savory pancakes or small frittatas, which is great if one is in a hurry. One batch made enough for a square pan of baked and 5 supper pancakes.
     
  4. fabulous! used to make this all the time when I was younger and completely lost my recipe! I did not put any cheese in my due to dairy restraints on my family and this recipe did not require any substitutions...still came out great! I would bake this in a smaller pan next time. I would try the 8 x 8 glass pan for a bit thicker piece.
     
  5. I didn't have onion, so I used some green onions I had laying around and added a jalapeno pepper for some spice instead of tabasco and completely omitted the seasoning salt and came it out great. Though, I would say its like a cross between a bread and quiche because of all the egg.

Zaar...Wow, what a place! I'm one of the old timers of Zaar. I can't count the number of wonderful dishes I cooked in the past few years since joining. Along the way I have had the pleasure of meeting several Zaar chefs. Talk about your fruits and nuts! lol. I have enjoyed meeting them all. Family: What's to say...I have had the same sweet husband forever (Good thing....I'd hate to have to break a new one in...=) and live close to a couple of grown children. (Maybe you've met Smoke Alarm Jr. ..her brown rolls are sooo good!) Therefore, my family gets together often to enjoy each other's company and cooking. My greatest joy is six "little to tallerthanme" kids running around calling me Grammy. They wear me out! lol For the past thirty years I have been a Special Education teacher for grades 9-12 and love it. Took some time off last year to recovery from surgery, chemotherapy and radiation for breast cancer. (Loved the radiation....I keep imagining that we are absolutely napalming the nasty cancer cells tohellandback to keep the little suckers from returning. =) My prognosis is good and now "I'm back in the saddle again". lol. Being a north country "gurl", I am happiest outside...walking, fishing, sitting in front of an outdoor fire or being on water (although in February it's a bit stiff....=0) When indoors I like to read, garden, knit, quilt and paint. During cold Maine weather I like to warm my feet on a very large ( 100 pounds of long legs and huge feet), sweet and furry golden retriever named Kerry (aka KTBRD: Kerry the big red dawg..lol) . In the summer, the dawg and I round up the grandkids, hit the local dairy bar for a Mounds Sundae that is to die for!!!=0) . Then spend a lot of long and lazy summer days at camp . All in all...Boy, Life is good! =)
