Sb Diet Phase 1 Spicy Chickpea and Onion Soup

- 2 red onions, sliced finely
- 2 garlic cloves, minced
- 1 teaspoon harissa (use (to taste)
- 2 (14 1/2 ounce) cans canned chick-peas, drained
- 14 1⁄2 ounces canned diced tomatoes
- handful arugula leaf
- handful baby spinach leaves
- salt & freshly ground black pepper, to taste
directions
- Heat some olive oil and a knob of butter in a saucepan over a low heat and once the butter has melted add the onions and garlic- stir and then gently sautee for a good 20 minutes or until the onions have softened and become golden.
- Stir in harissa and cook for a further 5 minutes.
- Add the tomatos and continue to simmer on a low heat for a further 10 minutes to allow the flavor to intensify.
- Stir in chickpeas and enough water or vegetable stock to cover the mixture. Simmer for 15 minutes- the chickpeas are already cooked so all you are doing is getting them up to temperature and absorbing the flavors.
- Toss in a couple handfuls of arugula and baby spinach leaves- stir and then taste, adjust the seasoning with salt and pepper as desired.
- The soup is now ready to serve.

Cooking Is My Sanctuary....
2010 Resolution- Eat healthier, limit fast food to once a week, and possibly eat steak once a month but will test myself with once a week first.
Back in July 2008 my boyfriend and I were searching for an amazing chorizo recipe and ended up on this site. Since then it's been love, not with the bf but with cooking (don't believe in having a serious relationship until I have a degree, weird/dorky I know). It's been 2 years since and my relationship and cooking skills have grown tremendously. My life would honestly be so much more different if it weren't for Recipezaar; I'd be a fast food junkie (and more overweight) and I think it's the delicious meals I've concocted (from aaAAAaaAAmazing recipes I've found on here) that has kept him around for so long, haha jk (sorta).
As you can tell I love making side notes (i.e parenthesis). I also have a big little dog named Charlie who loves my cooking too.
