ingredients

1 (15 ounce) can creamed corn
2 eggs
¹⁄₂ cup saltine crackers
¹⁄₄ cup butter
¹⁄₄ cup evaporated milk
¹⁄₄ cup carrot, shredded
¹⁄₄ cup bell pepper, chopped
1 tablespoon celery
1 teaspoon onion
¹⁄₂ teaspoon salt
¹⁄₂ teaspoon sugar
¹⁄₂ cup shredded cheddar cheese

directions

combine first 11 ingredients in a bowl.
mix and pour into greased 1 qt baking dish.
sprinkle cheese on top. bake at 350° for 35 min.
