ingredients
- 2 cans crushed pineapple, undrained
- 2 cups sugar
- 1 can chunk pineapple, drained
- 3 eggs
- 4 cups breadcrumbs
- 2 tablespoons milk
- 1 cup butter
directions
- On low speed, mix crushed pineapple with juice, bread crumbs, butter, sugar, eggs, and milk.
- Stir in chunk pineapple.
- Spoon into casserole dish and cook, uncovered, 1 1/2 hours at 350 deg.
- or until golden brown.
- Serve hot or cold as a casserole, or as dessert with ice cream.

Wow, I just had this on Christmas night, courtesy of a central Texas-native grandma so it must be a regional thing. I'd never heard of anything like it and was a bit unsure, as were the kids, lol....well, we all tried it together and immediately went back for more! It's so different but really good...almost like a bread pudding, but not exactly...a bit remniscent of scalloped potatoes, but not exactly the same. Sweet but not *too* sweet, great hot with a sprinkle of salt or as cold leftovers with a splash of cream. My children have already asked me to make more for them; I love it when they find new and different things that really catch their attention (and appetite!) Thanks so much for including this unique and tasty recipe here, Miss Annie!
