- 8 medium potatoes, unpeeled
- 1 small onion, thinly sliced
- 3 tablespoons butter
- 12 ounces sharp cheddar cheese, grated
- 3⁄4 cup milk
- 1⁄2 cup chicken broth
- 2 tablespoons soy sauce
- 2 tablespoons chopped parsley
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- 1⁄2 teaspoon thyme
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 1⁄2 cup fine breadcrumbs
- 1 -2 tablespoon butter
directions
- Preheat oven to 350*F.
- Butter a 2 1/2 to 3 quart , deep baking dish. Scrub, then thinly slice potatoes into baking dish. Layer with onion, then dot with 3 TBS butter, and cover with cheese.
- Combine remaining ingredients, except bread crumbs and butter, and pour over all. Top with bread crumbs, dot with butter and bake, uncovered for 1 1/2 hours.

I have to admit I was a bit skeptical when I mixed up the sauce to pour over the potatoes simply because it just didn't look very appetizing. Boy, was I ever wrong. The sauce came together great after cooking and the flavor is wonderful. I asked DH how he liked them and he said "I love the potatoes - they are perfect". Thanks for a great side dish MarieAlice!
