Scalloped Potatoes for Two

"Since I sometimes have to cook for just me, I've been on a search for recipes that make enough for just one or two people. So when I came across this one in the TOH 2002 Annual Recipes that was sent in to them by Edith Jennings of Prarie City, Iowa, I knew I had to try it.The time for peeling the potatoes has been included in the prep time. I guess if you wanted to speed up the time it takes to prepare this recipe, you could slightly cook the potatoes in the microwave or on the stove top. The addition of the French Fried Onions was my idea. Sumitted to " ZAAR " on October 21, 2009."

  • Place potatoes in a greased 1 quart baking dish, set aside.
  • In a small pan, melt margarine and then add flour cook until the flour taste disappears ( About 3 to 4 minutes ).
  • Add the milk a little at a time, bring to a boil then reduce heat and stir until slightly thickened.
  • Add cheese,salt, pepper, and worcestershire sauce and stir until cheese is melted.
  • Cool sauce slightly, pour over potatoes.
  • Cover potatoes and bake for 25 minutes at 375 degrees, remove cover and top with french fried onion, and paprika.
  • Bake for another 20 minutes or until potatoes are fork tender.
  • Let " rest " for 10 minutes, so sauce will thicken.

  1. Please don’t think I’m criticizing. This recipe is perfect for two people but I want to add a layer of onions to it. it. This is just a personal preference. Will this have any effect on the other ingredient amounts?

  1. Scalloped potatoes do not include cheese. When cheese is included, the dish is considered potatoes au gratin.
     
  2. This is very good. I recipe can be tweaked but I don't think people should give their versions of their recipes. I had never made scalloped potatoes because my husband doesn't like cheese!! ?? I decided I was going to find a recipe for two and try it. I'm so glad I did!!!?? I see now how this can be adjusted to individual tastes. Thanks for a YUMMY ?? recipe!! I will eat my fill of the leftovers tomorrow night!!!
     
  3. The cheese sauce is very good but the cooking time and the potatoes are taking much longer to get soft and editable. I would suggest you put oven on 400-475 degrees for the time you suggest. I have had to cook this for over one hour and thirty minutes. Otherwise, I would have given this a five star review.
     
  4. I could never have scalloped potatoes because of life-threatening allergies. But now there are so many non-dairy options! And there are no leftovers! Thank you.
     
  5. This is the first recipe for scalloped potatoes I've ever made that actually came out like it's supposed to. Wonderfully cheesy and crispy on top, just delicious!!!!! I did however have to cook them a bit longer than directed. The recipe will make a repeat performance!!!

Tweaks

  1. Oven should be on 400- 475 degrees and then maybe the tators would cook.
