Directions

  1. Put the potatoes, onions, salt and milk into a cast iron skillet (any heavy skillet should work).
  2. Simmer covered for about 40 minutes or until you can easily poke with a fork. Be sure to stir or your milk will burn!
  3. Mix in cream cheese and cayenne in until incorporated.
  4. Sprinkle over the top with cheddar cheese and bread crumbs.
  5. Cover for 10-15 more minutes until the cheese in melted over the top.
