Scandinavian Cucumbers

"My mom used to make this in the summertime with cucumbers fresh from her garden. It became a family favorite. I use my mandoline to slice the veggies very thin. I hope you enjoy this cool summertime salad as much as we do! Cooking time is chilling time."

  • Combine sour cream, parsley, vinegar, sugar and dill weed.
  • Gently add the onion and cucumber slices.
  • Cover and chill.
  • Best if served the same day.

  2. Very refreshing. I steeped fresh tarragon in vinegar to make the tarragon vinegar, and also used fresh parsley and dill from my garden. A friend gave me a garden standard cucumber, I used that as well. A very nice side dish. I did use a lot more dill than a pinch - I think most Scandinavians would, too!

Tweaks

  1. Steeped fresh tarragon in vinegar to make tarragon vinegar. Used fresh dill, and a lot more than just a pinch.
