Scandinavian Pancake

"Like a Dutch baby or german pancake baked in the oven in an iron skillet. Topped with fruit and powdered sugar or brown sugar. I found this recipe in the newspaper 25 years ago and make it often, my family loves it. I put it under the broiler to brown on top, this is the best part."

  • Melt butter in oven proof skillet on top of stove.
  • Mix eggs, milk sugar, flour and salt with a whisk.
  • Pour into buttered skillet.
  • Bake in 425 degree oven for 20 minutes.

Melody,Thanks so much for this fun to make recipe,I had all 4 of the grandkids here for breakfast yesterday and we had a ball making this.We used powdered sugar and strawberries for the topping,and the kids really enjoyed making it,and they licked the platter clean!!   2. I made this a few moments ago; I've been looking for something new and interesting for breakfast. It's really different. It's nicely sweet, remeniscent of egg custard, and great fun to watch baking. However, I think it should have baked a bit longer, at 20 minutes the center was just beginning to rise. Also, I think I'll try halfing the butter, and adding a bit of cinnamon. I will definitely make this again.
