directions

  • mix sausage with herbs and spices.
  • divide into 8 equal portions.
  • soft boil the eggs, (about 6 minutes), cool and peel.
  • pat meat portions into flat rounds, Place an egg into the center of each and fold the meat around the egg, covering completely.
  • brush each with the beaten eggs and roll in the breadcrumbs.
  • heat oil to about 350 degrees F.
  • fry each egg until meat is medium to dark brown.
