Scott's Chili

"This is my version of chili. Scott was my husband from OH and after being together so many years he only wanted this to be hot! I hope you like it. This can be made as mild or hot as you like depending on the chili powder you use. I use a lot of cumin in this recipe. Sometimes I add more than the 2 tablespoons stated here and this is the only time I really use cumin. There are so many versions of chili out there, I hope you enjoy mine."

  • Heat oil in heavy saucepan.
  • Add onions, green pepper, jalapeños and garlic and sauté until onions are translucent.
  • Add ground beef to the pot and cook until meat is evenly browned.
  • Add the cumin, oregano, 1/4 cup chili powder, 2 tablespoons chili powder, ground cayenne, salt and mix well.
  • Add crushed tomatoes, tomato paste, beer and water.
  • Bring to boil, turn down heat and simmer covered.
  • After 1 hour of simmering taste and add more chili powder if you want.
  • Simmer for 1 hour more.
  • Serve topped with chopped onions, cheddar cheese and sour cream if you like.
  • Corn bread on the side.

  1. I made this using 1 lb. gr. beef, fresh peppers, jalapenos from the garden. I only had 1 t. cayenne, and 2 T. chili powder, but turned out great for us.
     
  2. Yikes, this is a spicy chili. It was a little too much for my taste. I will definitely be making it again, but with half the amounts of garlic, cumin, and cayenne. Also, I think the water is not necessary...I would recommend only adding it if it gets too thick when simmering. Thanks for sharing this recipe.
     
  3. This is very good chili. I cannot handle hot so I did not add jalapenos or cayenne pepper. I only had 1/2 of 1 onion and only 1 tsp of cumin left in my house. I really liked the beer flavor combined wih the other spices. Made for Pick A Chef Fall 2008.
     
  4. Very HOT, very SPICY, very GOOD! This must be a Texas chili, no beans. I'm a Yankee so I served beans on the side. :) This is packed full of flavor that I didn't see a need to add any more chili powder in step 7. This will be a make again chili in our house.
