-
8 large ribs
- Serves:
- 2-4
ingredients
- 1 kg pork spareribs
- 1⁄2 cup chinese marinade (bought from Chinese grocery store)
- 2 tablespoons Chinese fish sauce
- 4 tablespoons dark soy sauce
- 1 cup tomato ketchup
- 1⁄2 cup tinned crushed pineapple plus 1/2 cup of the syrup
- 3 tablespoons clear honey
directions
- Cook ribs for one hour at 180°C in baking tray (a couple of inches deep roasting tin is ideal).
- Mix all ingredients together, pour over ribs in baking tray, return to oven and bake for an hour or until ribs cooked. If necessary, reduce heat to 160°C for last half hour to make sure the ribs don't burn with the sweet sauce on them. Cooking time is dependent on thickness of rib meat - the thicker the meat the longer the cooking time. This is a little bit of trial and error as every time they are cooked the length of time varies according to the size of the ribs.

I live in a beautiful bungalow built for us to my design, and the kitchen is wonderful. I love cooking and concocting new recipes. I used to decorate cakes (wedding cakes and celebration cakes) as a hobby. I am a great fan of Rick Stein and his fish cookery books. Since being widowed in 2004, I am finding it difficult to cook small amounts, but still enjoying culinary adventures. I also enjoy having friends round for a Raclette evening where they all get to try something different as they are rarely found in the UK.
