  • Cook pasta according to package directions, drain and set aside.
  • While pasta is cooking, heat oil in skillet over low heat. Add next 8 ingredients (tomatoes - pepper), cook stirring until heated.
  • Stir in cooked seafood (which has been seared or sauted or it isn't stone cold).
  • Spoon sauce over pasta and sprinkle with cheese.

  1. Mmmm...delish! What a nice, light meal. I doubled the recipe and used 1 T olive oil, 6 oz dry whole wheat pasta, and 3/4 lb cooked shrimp. I was really pleasantly surprised at how quickly the flavors in the sauce melded with so little cooking time. I wouldn't change a thing about the sauce; no one flavor stood out above the others and the fresh tomatoes were really showcased beautifully. Thanks for posting! Made for Newest Zaar Tag.

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes. I lost over 90 pounds on Weight Watchers and have maintained for over a year now -- so my cooking/eating habits have changed drastically following my weight loss and to keep it off!</p>
