- 3 -4 cups angel hair pasta (or your favorite pasta)
- 8 ounces cooked seafood (fish or shellfish or mix it up)
- 1 tablespoon olive oil
- 3 tomatoes, seeded and chopped
- 2 garlic cloves, minced
- 2 tablespoons parsley, chopped
- 2 tablespoons basil, chopped
- 2 tablespoons lemon juice
- 1⁄2 teaspoon sugar
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄4 cup parmesan cheese, shredded
directions
- Cook pasta according to package directions, drain and set aside.
- While pasta is cooking, heat oil in skillet over low heat. Add next 8 ingredients (tomatoes - pepper), cook stirring until heated.
- Stir in cooked seafood (which has been seared or sauted or it isn't stone cold).
- Spoon sauce over pasta and sprinkle with cheese.

Mmmm...delish! What a nice, light meal. I doubled the recipe and used 1 T olive oil, 6 oz dry whole wheat pasta, and 3/4 lb cooked shrimp. I was really pleasantly surprised at how quickly the flavors in the sauce melded with so little cooking time. I wouldn't change a thing about the sauce; no one flavor stood out above the others and the fresh tomatoes were really showcased beautifully. Thanks for posting! Made for Newest Zaar Tag.

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes.
