- 1 lb lean ground beef
- 1 1⁄2 teaspoons salt
- 1⁄4 teaspoon pepper
- 4 potatoes, cut in 1-inch cubes
- 4 carrots, cut in chunks
- 1 onion, cut in chunks
- 1⁄2 cup catsup
- 1⁄2 cup water
- 1 1⁄2 tablespoons vinegar
- 1⁄2 teaspoon dried basil
directions
- Preheat oven to 350°F.
- Combine ground beef with 1 tbsp of salt and 1/4 tsp pepper and mix well.
- Shape into 1-inch meatballs.
- Bake in oven 15 minutes or until browned.
- Place the potatoes, carrots and onion into the crock pot.
- Top with meatballs.
- Combine catsup with vinegar, basil and remaining salt and pepper to taste.
- Pour over meatballs.
- Cover and cook on low 4 to 5 hours or till veggies are done.
