- 3 tablespoons vegetable oil
- 1 large white onion, chopped
- 1 green bell pepper, chopped
- 2 garlic cloves, minced
- 3 (15 ounce) cans black beans, rinsed and drained
- 14 1⁄2 ounces stewed tomatoes, undrained and chopped (cajun-style if you can find them)
- 1 1⁄2 cups water
- 1 tablespoon red wine vinegar
- 1 teaspoon sugar
- 1 teaspoon black pepper
- 1⁄2 teaspoon sea salt
- 8 ounces tomato sauce
- 6 cups hot cooked yellow rice
- 1⁄2 cup chopped green onion

directions
- Place oil in a dutch oven over medium high heat. Saute onion, bell pepper, and garlic about 5 minutes, or until tender. Add thye beans, tomatoes, water, vinegar, suagr, pepper, salt, and tomatoe sauce. Stir to combine.Bring to a boil, cover, reduce heat to low, simmer 1 hour. Uncover and simmer 20 minutes, stirring occasionally.
- Serve hot over yellow rice and toip each serving with green onions and sour cream.
