“This soup is hearty and healthy, from a bon appetite magazine. I made this one year for Super bowl party and the Guys loved it!!! Option #1 I buy a hot roasted chicken from the grocery store on the way home and remove the meat and add to the soup. Option #2 You can also ladle it over rice. SO many options... and sooo easy. *Garnish with chopped cilantro, peanuts or shaved coconut or put out all three and allow guest to dress up their portion.”

Directions

  1. Heat oil and add onions, garlic cilantro cook until onions are softened.
  2. Stir in Cayenne and Curry powder to heat the spices.
  3. Add water (stock) and the full can of tomatoes with juices.
  4. Bring to boil.
  5. Add peanut butter and lower heat allow the peanut butter to dissolve.
  6. (I use my immersion blender to puree at this point to make a smooth soup).
  7. Add coconut milk and salt to taste ,simmer.
  8. Ladle into bowels and garnish as desired.
