  • Preheat oven to 350 degrees Fahrenheit.
  • Mix margarine and sugar until fluffy, add egg, lemon, and orange juice. Add in flour, cinnamon and baking soda. Mix.
  • Make balls of heaping teaspoon size and roll in cinnamon sugar coating.
  • Place balls on prepared baking sheet and flatten so they are 1 inch apart.
  • Bake at 350 degrees for 12-14 minutes until no longer very squishy when pressed (Still slightly squishy).

I enjoyed making these cookies, & they are delicious, but I also had to wing-it a little ~ Because there was no lemon juice (or concentrate) listed with the ingredients, I used 1/3 cup of orange juice concentrate & the same amount of lemonade concentrate! After that I had to do a bit of juggling with a couple of the other ingredients to get the balls to form properly, but when all was said & done, I had some very flavorful cookies to include as part of my contribution to a local cookie sale! [Made & reviewed for one of my adoptees in this fall's round of Pick A Chef]
