Sensational Herbed Chicken

  • Combine the three spices (first 3 ingredients). Sprinkle the herb mixture over the chicken. Brown the chicken, in batches, in the butter in a large skillet over medium-high heat.
  • Place the chicken in a lightly greased baking dish. Combine the wine and lemon juice; stir well. Pour wine mixture over the chicken.
  • Cover and bake at 375 for 45 minutes or until the chicken is done.

  1. I doubled the herb mixture and seasoned the chicken with salt and pepper before sprinkling with the herbs. Tasted great and the lemon wine sauce was superb. Meat was moist and tender. Thanks for sharing this recipe.
     
  2. I thought this was a good recipe but for me, it needs more spices. So, the next time I make this, I will increase the spices and maybe add a bit of garlic salt too. Thanks for posting, I will make this again.
     
  3. Breezer, this is just great. Very easy to make, tasty and low in fat too. I used skinless, bone in thighs. And ended up subbing apple juice for the white wine, cause I was out :( The substitution was great and I ended up with a nice pan full of beautiful stock to use for another recipe. And I used an oven proff skillet so I went from browning to oven in just one dish, what could be better. Thanks for posting.

I used fresh herbs (about 1.5 to 2 teaspoons of each) of rosemary, oregano and basil and followed through with the recipe but using skinless bonesless breast chicken which were on the small side only about 150g to 200g (5oz to 7oz) each and allowed 25 minutes cooking time but could have done with 15 to 20 minutes in a fan forced oven at 170C (but that was my call). Overall a good recipe and definately one I would like to try with the chicken on the bone which I think would devinately add the flavour. thank you breezermom and Went To Market Tag Game.
     
  5. Great recipe. Variations? You bet. Used 2 lbs skinless chicken breast (cut to serving size), thyme, mixed spices and finely chopped fresh rosemary (1 tsp). I followed the rest of the ingredients exactly. It was a hit for Mother's Day Lunch. You are always ahead with a 'winning recipe'. Especially when it is easy to prepare. Many thanks for this one.
