  1. In a shallow bowl, whisk together eggs and milk, season to taste with salt and pepper, and set aside.
  2. Stir together flour and next 6 ingredients in a shallow dish.
  3. Dip chicken pieces in egg mixture, and dredge in flour mixture, pressing mixture to coat.
  4. Heat olive oil in a large skillet over medium-high heat.
  5. Add chicken and cook, turning once, until lightly browned on both sides.
  6. Reduce heat to medium, and cook until done and golden brown, turning several times.
