  • Place cucumbers in a colander, sprinkle with salt& toss.
  • Let stand for 30 minutes.
  • Rinse cucumbers& drain well.
  • In a large bowl, combine the onions, garlic, soy sauce, vinegar, oil, sesame seeds& cayenne.
  • Add cucumbers& toss to coat.
  • Cover& refrigerate until ready to serve.

  1. My family liked this, and it was a great way to serve cucumbers without adding sugar. I *did* get the suspicious question "were cucumbers on sale?", but I swear it wasn't a complaint <g>. I followed the recipe exactly. I even toasted the sesame seeds - well worth it.

  4. I loved this cuke salad. I made it as written, halving the recipe. The only thing I may do different in the future is to peel the cucumber if they're larger ones as the skin was a bit tough, but that was my problem. I love the color contrast of the dark and light green so I may just use smaller, more tender cucumbers. Or, maybe I'm just making too big of a deal about the skin altogether!! Anyway, thanks for this recipe KeyWee, I love the flavors in this salad :)
     
  5. I really like this dish. I made it with lemon cukes (because my garden is bursting with them) and omitted the green onion and replaced with a little red onion (too lazy to go to the store).

Can't believe I've been a member here for 18 years! It's changed a lot since the old RecipeZaar days and maybe or maybe not for the better. It used to be a community and now it's just a tool. Sad, but life goes on. I have been in Kentucky for 12 years now and enjoy the country lifestyle, along with master gardening. Recipes I've found here since Day One are still in my rotation. Don't entertain that much anymore, so finding new and exciting foods is no longer center stage. Just glad to have so many good recipes to fall back on because eating out is expensive and sometimes too far to drive.
