Sesame Tuna (Bassas Da India)

"This recipe is from week 24 of my food blog, "Travel by Stove." I am attempting to cook one meal from every nation on Earth, and Bassas da India is my 24th stop. Bassas da India is actually an unpopulated group of Islets near Madagascar, so this recipe comes from Island Adventure Charters, a company that charters a fishing trips in the area."

  • Coat the tuna with the spice blend, then sprinkle both sides with sesame seeds.
  • Heat the oil in a pan. As the oil heats up, stir in the powdered chicken stock.
  • Add the tuna steak and fry lightly on both sides. You only want about a quarter of the meat to actually cook through; the remaining 3/4 on the inside should stay pink.
  • Remove the fish from the heat and slice thinly.
  • Serve with pickled ginger and a small dish of soy sauce for dipping.

  1. Literally takes less than 5 minutes to make. Best fresh from the pan, with the hot crust and still-cool outside. The granules in the oil give it an extra something that I think it would really miss otherwise.

I am a mother of two with another one on the way! I am married to an Englishman and we own a small business in our local area. We live in a very small town called Rough and Ready (yes there really is a place called Rough and Ready!) I am a part-time writer and full time mom. My kids were born 15 months apart and keep me so busy I barely have enough time to cook and no time at all for my other passion, horseback riding. I once had four horses but am down to two; my Arab mare Argo and old Denver. Both of them spend the vast majority of their time standing around in my back yard eating hay.
