  • Method : Remove pips and juice, cut out skin and pith as much as
  • possible Put peel through mincer and soak in water and juice for 12
  • hours. Boil for 2 hours, then add sugar and boil for another 2 hours.
  • Soak pips and skins in water, bring to boil and strain, add to peel
  • and juice before sugar is added.
  • Note : I use a liquidiser to cut the fruit, a blender tends to 'hold' the peel in large bits.

I am a vegetarian--always have been, so have quite a few tips on veggie cooking,--but I can always learn new ones. Love cheesecake and have NEVER found a decent recipe for that, one that doesn't take lashings of cream or that falls apart when you take it out of the fridge. I bake a decent roast at Christmas with chestnuts which also serves as a complement for those who are eating turkey etc. I came across this site when trying to find a recipe for cranberry sauce....which I have found thank you
