Shaah Bigays - Somali Spice Tea

ingredients
- 3 cloves
- 1 cinnamon stick
- 3 peppercorns
- 2 tea bags or 2 loose tea
- 4 cups water
- 2 -3 teaspoons sugar
directions
- Place spices in a mortar and lightly crush.
- Bring water and sugar to the boil in a pan and add spices, simmer for 5 minutes.
- Pour this into a tea pot and add the tea bags or loose tea. Steep for 5 mins and then strain into cups.

Slightly bitter but as I got closer to the bottom of the cup it became more evident. Not at all how I remember Somali tea as being very sweet. I did replace the sugar with creamed honey to be healthier and may have used more than called for but certainly not less. Milk would tone this down. But from what I have read this combination is to be drunk black. Made for ZWT7 Africa, for my team, Food.Commandos
