Sharky's Favorite Oatmeal

  • In a medium bowl, combine the milk and oats. Cover and refrigerate overnight or at least 6 hours.
  • Transfer the oats and milk mixture to a heavy-bottomed saucepan. Add the salt and cinnamon sticks and bring to a boil over high heat.
  • Lower the heat and simmer gently, stirring frequently, uncovered, for 10 minutes.
  • Stir in the vanilla and sugar, and simmer and stir for 5 more minutes.
  • Can be served immediately with any toppings you like (fruit, honey, nuts, maple syrup, yogurt, cream, chocolate chips, etc.).
  • If you want to serve it later, pour into a container (such as a square baking pan), cover, and refrigerate. It's great cold, believe it or not, sort of like bread pudding. Or you can reconstitute it into its creamy state by adding a little water and microwaving or heating in a saucepan.
