  1. In a medium bowl, combine the milk and oats. Cover and refrigerate overnight or at least 6 hours.
  2. Transfer the oats and milk mixture to a heavy-bottomed saucepan. Add the salt and cinnamon sticks and bring to a boil over high heat.
  3. Lower the heat and simmer gently, stirring frequently, uncovered, for 10 minutes.
  4. Stir in the vanilla and sugar, and simmer and stir for 5 more minutes.
  5. Can be served immediately with any toppings you like (fruit, honey, nuts, maple syrup, yogurt, cream, chocolate chips, etc.).
  6. If you want to serve it later, pour into a container (such as a square baking pan), cover, and refrigerate. It's great cold, believe it or not, sort of like bread pudding. Or you can reconstitute it into its creamy state by adding a little water and microwaving or heating in a saucepan.
