Shepherd's Pie

"This is a comfort dish. Can be made ahead & place in the frig. I make this, if I require any minor surgery as this dish is easy on the stomach. This is low salt as my diet requires. It is best when Beef broth is replaced with a can of consume beef broth undiluted. To much salt for me."

  • For topping.
  • place potatoes in large saucepan, bring to a boil then simmer partially covered 20 minutes till soft to fork.
  • Drain well.
  • Add milk, mash till fluffy.
  • Keep warm.
  • For filling.
  • Heat oil in large skillet over medium heat add onions to softed.
  • Add carrots& garlic saute 2 minute.
  • Add beef& thyme brown till no longer pink.
  • Add broth& simmer 1 hours.
  • Add cornstarch mixed ith cold water add to meat filling& cook 5 minute.
  • till thickened.
  • Place meat mixture in buttered ovenproof casserol dish.
  • Spread potatoes on top.
  • Score topping.
  • Bake in preheated 350F oven 30 to 40 minutes& filling is hot.

  1. The combination just didn't work for our tastes. I enjoy all the ingredients but the recipe came out as what I would term 3 stars for our personal taste.
     
  2. My wife and I enjoyed the recipe and I found I was able to cook 'on the fly' so to speak; cooking and reading the recipe as I went. I'm not very adept at cooking so I would say that makes this very simple. Two items... first, I couldn't figure out where the ketchup, dijon mustard and Worcestershire sauce were supposed to go and when. Second, I ended up adding more than double the cornstarch than was called for and it still didn't seem that thick. I was hungry, so I added corn from the can and some frozen peas, finishing off w/ just a little sherry for taste. Finally, my wife and I will add something (cheese, chives, who knows?) to the potatoes to spruce them up a bit. That said, thanks Kitty for your recipe; it was raining and cold and that just popped into my head and sounded good so I looked for your recipe... True to your word it was easy and easy on the stomach. We will be making this again and I will check back in. Best, EMS Shane
