Sheri's Slow Cooker Beef Stew

"I love beef stew. I am not fond of canned stew and have read many recipes and finally just took a little from one and a little from another and just added the things I like. This one my family loved so it's a keeper!"

  • Place diced potatoes and sliced carrots in a large microwave safe bowl, cover and cook in microwave for six minutes until potatoes are partially cooked.
  • Heat oil in a large skillet.
  • Place flour in a gallon sized plastic bag and coat meat.
  • Brown meat in skillet.
  • (Remaining flour in bag will be used as thickener) Put potatoes and meat in crock pot.
  • Add remaining ingredients.
  • Add flour from bag along with enough to make 1/3 of a cup of flour.
  • Stir well and let simmer on low for 4 hours.
  • If not to desired thickness you may remove cover and turn to high, stir every so often.
  • Or add more flour or some cornstarch dissolved in a little water.

  1. Wonderful! What more can I say. I followed the recipe exactly. I did double it - it almost didn't fit in my huge crock pot! I doubled it with the intention of freezing half. No such luck. My family saw to it that there was none left for freezing!
     
  2. I didn't pre-cook my potatoes, grate the onion, or add corn. I subbed in fresh baby portobellos, a few chopped carrots, and a few tbsp. of Italian seasoning blend as my spice. For liquid, I used half broth and half dark beer. I was looking for a great basic recipe that allows for customization, and I think this is it! Super hit with a baked loaf the first day, and even better over egg noodles the second. Thanks, Sheri!
     
  3. Except for the mushrooms, I followed this recipe exactly, and found this an agreeable, great-smelling, easy, "comforty" stew. DH & I agreed not to 5-star it, though, just because we thought it wasn't something we'd find in a restaurant or something we'd make for company. But it's still good home-cookin'!
     
  4. My son had a baseball game last night, so dinner in the crockpot was a necessity. This is the first time I've made beef stew in the crockpot, everyone loved it. I didn't add mushrooms (we don't care for them) and I did add frozen corn and frozen green beans, other than that followed the recipe exactly. The house smelled wonderful when we came in.   5. This would have to be by far and away the best crock pot beef stew i have ever tasted.... the only thing i did differently was left out the corn as my family doesnt like it that much.... so tasty and simple... thankyou!

I was born and raised in Utah. I was a graphic designer for ten years for a local school district. I have since moved on but still enjoy doing that for fun. I love to cook, read, listen to music, craft things. I don't think I really have a favorite cookbook. But if I had to pick it would be one that was written up by women in the area with home recipes. I think those are the best. Probably one of the reasons I enjoy Recipezaar so much.
