ingredients
- 1 (28 ounce) can whole tomatoes, including juice
- 8 slices white bread, well toasted
- 8 tablespoons butter
- 1 cup sugar
directions
- Place tomatoes in a large saucepan. Tear toast into about 4 pieces per slice; add to tomatoes. Add butter and sugar. Simmer, uncovered, 20 minutes, stirring occasionally. Serve warm.

This is the the late, great southern restauranteur Hap Townes' recipe. Simple, inexpensive ingredients elevated and enriched by lots of butter and white bread. If you remember that tomatoes are fruits,and not vegetables, the amount of sugar may make a little more sense. Honest food for hardworking people. These tomatoes go well with ham or fried pork chops and macaroni and cheese. And if you really want to treat yourself, look up Nashville legend Hap Townes' stewed raisins recipe. That's how you kick it old school southern style!

The name says it all... WOW is this SWEET!!! I doubled the amount of tomatoes (I used fresh) and all we tasted was simple syrup with a hint of tomato flavor. I have jarred it and when we want stewed tomatoes, I will add about 1/2 cup of this to some chopped tomatoes for flavoring and hopefully that will tone it down. It's all I can think of to save the double batch I made using just 1 cup of sugar. Evelyn, we love many of your posted recipes, but this one just didn't make the cut. Sorry :(

OK, here goes. I live in Athens, Greece. I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages!
I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure.
So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call.
What did I do wrong?
Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths.
I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time.
