Directions

  1. Preheat oven to 400 degrees.
  2. Whisk flour, sugar and baking powder in a large bowl.
  3. Add butter; using your fingertips, rub in butter until coarse meal forms.
  4. Whisk egg and yolk in a small bowl; add to flour mixture; stir just to blend.
  5. Line 2 baking sheets with parchment paper.
  6. Measure dough by 2 tbsp and roll into balls; place on prepared sheets 2 inches apart.
  7. Make an indentation in center of each ball; fill with 1/2 tsp jam.
  8. Bake cookies until golden, 12-14 minutes.
  9. Transfer to a wire rack to cool.
