Shortcut Sirloin Stroganoff

"My friend Linda gave me this recipe 20 years ago and my family likes it better than the traditional recipe. I like it too, because it's a heckofalot faster and I prefer sirloin to the round steak usually used in most beef stroganoffs.."

  • Saute onion, garlic and mushrooms in 2 T butter.
  • Meanwhile, slice steak into 1/4" strips.
  • Remove sauteed mixture with slotted spoon and set aside.
  • Dust sirloin strips with flour, salt and pepper and brown in pan drippings.
  • Remove meat with fork to save pan juices and add to mixture that had been put aside.
  • Add 2 T butter to pan drippings to melt then add four and tomato paste and stir until it's a sticky mess (AKA roux).
  • Add boullion or broth and simmer, stirring constantly, until thick and bubbling.
  • Add reserved mixture and simmer to heat through and blend flavors. If meat is not yet tender, simmer covered until it is.
  • Cook noodles and drain.
  • When ready to serve, stir in sour cream and wine to meat mixture and add salt and pepper to taste.
  • Place individual servings of noodles on each plate and cover with stroganoff mixture.

  1. This was awesome! I usually use round steak but had a sirloin and wanted to find a sirloin-specific recipe. I like this even better than my usual which I love, so this will be my new go-to thanks!! I did do a couple of things differently for my family's tastes: I deglazed the pan after searing the meat with a couple glugs of good red wine and then poured the reduced wine over the meat and veg. I also omitted the tomato paste, used chicken stock (what I had) and added a Tbs of beef boullion. It was so so good even without the sour cream. Served over egg noodles with roasted asparagus on the side.
     
  2. Shortcut or not, this turned out really great! I added two extra smashed garlic cloves while cooking and removed before serving, (I love garlic!) and I did use round steak as that is what my daughter-in-law had at her house. This was really easy to make...and I will do it again for my students at home. I personally don't consume beef anymore, but had to have it for taste. Yummy! Think that it can carry more onion, if you like onions! Oh, forgot, didn't use the wine as I didn't want to open a bottle for just 2 tbls full.

I've loved Zaar for many years and the great recipes I've found here. Back when I was working and the kids were little I was an okay cook who excelled only at a few family recipes. I began "surfing" on Zaar and started making so many wonderful fast and easy recipes. As they got older and I had more time, I began making more adventurous meals. Thanks to the Zaar family of cooks and the enthusiasm for cooking I developed through them, I'm now considered a good cook and develop many of my own recipes. When the kids were grown and I was no longer working, what started as a place to find new recipes turned into a community made up of varied and interesting people. After years as a "recipe surfer", I became a premium member in 2005 not only to start organizing recipes but also to participate even more in discussions, forum activities and having fun with new friends. I am hoping you enjoy the recipes I have posted and welcome comments. I try to thank everyone who reviews one of them, but if I "drop the ball" or if you can't receive Zmail, please know how much I appreciate you taking the time to make one of my recipes. I'm a dinosaur when it comes to taking digital photos of my recipes and getting them into my computer. I've had vision problems plus a retina disease called retinopathy prematuria since birth, but never let it stop me until the last few years when I had to quit driving becauser of it. I moved from "sweet home Chicago" to rural San Diego County, CA, in 2004 when my husband of 35 years retired. Sadly, we are not near our children and beautiful grandchildren, who live in Florida, Minnesota and Arizona. Zaar has helped the transition from moving from the city to the country and becoming an empty nester confined to home a little more bearable. I still love to read my grisly crime novels, play on the computer, and play blackjack at local casinos (within reason, of course??) Even though my old friends tease that I'm a cross between a dirty old lady and a mother hen, Zaarites seem to bear with me. I think I love going to restaurants more because of reading the menus than eating the food.
