  1. In a small bowl, combine the butter, thyme, Parmesan, and garlic.
  2. Spread evenly on one side of each bread slice.
  3. Lightly grease a griddle or a large skillet and place over medium heat.
  4. Carefully sprinkle a couple drops of water on the griddle.
  5. When they sizzle and jump around, the griddle is ready.
  6. Place four slices of bread, butter side down, on the hot griddle.
  7. Layer the sandwiches with a slice of each cheese and a tomato sauce, if desired.
  8. Brown 3-4 minutes on each side.
  9. Cut in half and serve warm.
