  • Combine soy sauce, vinegar, and sugar. Microwave for 30 seconds and stir to dissolve the sugar.
  • Put the eggs in a pot of water and bring to a boil. Turn off the heat, let sit for 6 minutes.
  • Take eggs out of the pot and put them in an ice water bath, until they are cool to the touch.
  • Peel the eggs and put them in a zip-lock bag with the soy marinade.
  • Marinade for 12 hours, rolling the eggs around occasional for uniform coverage.
  • Note: the yokes should come out glossy. If you want your yolks firmer, leave in the pot for up to 15 minutes. The Marinade can be used several times, keep in a jar in the fridge.
