- 5 (48 ounce) cans boneless chicken
- 6 (10 3/4 ounce) cans cream of celery soup (undiluted)
- 2 1⁄2 cups hot water
- 3 chicken bouillon cubes
- 1⁄4 cup plain breadcrumbs
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1⁄2 teaspoon poultry seasoning
- 120 hamburger buns
directions
- Open boned chicken and place in large roaster.
- Stir chicken until all pieces appear to be shredded.
- Dissolve bouillon cubes in hot water and add to chicken.
- Add remaining ingredient except hamburger buns.
- Stir thoroughly.
- Heat mixture up to 300 degrees.
- Once mixture is heated through place 1/3 cup of mixture on hamburger bun and serve.

First time ever making a shredded chicken sandwich recipe. My husband and I are from Ohio (hot chicken salad sandwich capital!) and both grew up on this classic. Neither one of us have a family recipe though. So after looking for one that sounded "right" we gave this a go. I roasted a whole chicken in the oven at 350 with carrots, onion, celery, chicken stock, butter and salt and pepper (family recipe). Removed skin and bones. Added meat to 1 can cream of celery, about 1/2 cup of cooking broth, approx 2-3 TBS mayo and 3-4 TBS plain breadcrumbs. Warmed and served. It was almost as good as I remembered! May add a little extra mayo next time just for the creaminess. But overall a great throwback recipe! So glad I found it!
