  1. Add olive oil to a skillet on medium high heat. Sautee shrimp with salt, pepper, and red pepper flakes for 2-3 minutes until shrimp starts turning pink.
  2. Add Ragu roasted garlic pasta sauce, mint, golden raisins, and capers to shrimp and simmer 2-3 minutes. Turn heat off.
  3. Place shrimp mixture on a corn tortilla. Divide feta cheese into 4 sections, and add 1 section on top of shrimp mixture. Top with 1/4 of thepine nuts and cover with another corn tortilla. Repeat until 4 quesadillas are assembled.
  4. Heat a nonstick skillet to medium high heat. Cook each quesadilla 3-5 minutes per side until browned slightly. Enjoy!
