Shrimp Campechana (Cocktail)

"This is a tasty shrimp appetizer always receives many requests for the recipe. It is a beaufiul presentation when served in a tall hurricane glass (with a long tea spoon), on a plate, surrounded by tortilla chips. It is also delicious with fresh blue crab added to the mix."

I loved to cook but 3 kids keep me busy shuffling them back and forth from their activities. Our family has softball, baseball & soccer practices and games 7 days of each week! My specialty is cooking while I am not actually in the house - the crock pot, bread machine, and oven that can be programed to go on and off are used every week so my family can walk into the house at 7:30pm to sit down and eat dinner immediatly. Meals are usually prepared on the weekends or while the children are at school because we are not home from 4 - 7pm when most people cook.
