  • In large stock pot, add olive oil, pepper, onion and garlic and saute for several minutes.
  • Add all other ingredients except shrimp.
  • Reduce heat to low, cover and simmer for 30 minute.
  • 10 min before serving, add shrimp, and cook until just pink.
  • Serve with grated cheese if desired.

  1. This is a very healthy dish. Fortunately, I had an onion on hand as it is not listed in the ingredient list, but is listed in the directions. Also, 10 minutes is too long to cook small shrimp. Overall, it is a good recipe, but it could use a little more depth.
