  • Heat butter in skillet.
  • Reduce heat, cook onion and carrot.
  • Add curry powder and cook 1 minute, stirring. Then remove to a bowl.
  • Add oil to skillet, then heat mustard seeds, cook 30 seconds, stirring.
  • Add shrimp, cook until opaque, about 4 minutes, stirring frequently.
  • Return vegetables to skillet and add remaining ingredients to heat through.
