Shrimp Macaroni Salad

  • Bring a large pot of salted water to a boil, add the macaroni and let it cook until al dente; drain well.
  • Cook califlower, making sure not to cook too soft-leave al dente.
  • Cool.
  • In a medium-size mixing bowl, combine onion, bell pepper, celery, califlower, mayonnaise, sweet pickle relish, ketchup, pickle juices, olive, horseradish, hot pepper sauce, parsley, celery seed, chili powder, salt, black pepper and shrimp.
  • Fold the macaroni into the mixture.
  • Cover and chill at least 3 hours before serving.

  1. Instead of shrimp, I used small langostinos. Red bell pepper instead of green. Green olives stuffed with jalapenos. It was really tasty. Thaks, Tish.
     
  2. This is a great recipe! At first I thought that the ingredients were a little funny altoghther but wanted to try it since it was different and that I like all of the ingredients in this and let me tell you, my boyfriend couldnt get enough of this. I made it lastnight and doubled the recipe and the bowl is almost all gone. I like the many different flavors that this recipe has. Thank you for posting it.
     
  3. This was pretty good. Had a nice "zip" to it. I skipped the cauliflower, since not everyone likes it, and added frozen peas. I also used a red pepper instead of a green.
