Shrimp Quesadillas

"This is a great change from the usual sandwich for lunch. I've often thought I could try baking them all at once in the oven but I have'nt tried it yet. If anyone does, let me know how they turn out."

  • Heat 10" non-stick skillet over med-high heat.
  • Place 1 tortilla in skillet and sprinkle with 1/4 cup cheese and 1/4 of tomato, bacon and shrimp.
  • Sprinkle with additional 1/4 cup cheese.
  • Top with another tortilla.
  • Cook 1-2 minutes or until bottom is golden brown; turn.
  • Cook 1-2 minutes longer or til bottom is golden brown.
  • Repeat 3 more times.
  • Cut each quesadilla into wedges.
  • To keep quesadillas warm, place on a ungreased cookie sheet in oven.

  1. We loved the combination of the shrimp and bacon. Added green onion and baked in the oven for about 20 minutes; served with a corn salsa for dinner.
     
  2. These were very good. Easy to prepare. I did try baking these all at once in the oven as the description suggests, 350 F until the tops were lightly browned and the filling all heated through and melted together, it was about 10 minutes.
     
  3. Easy to fix and a very tasty recipe. I used fresh shrimp and it was good.

I love to cook and so I am thrilled that I found recipezaar. I work as an educational assistant in a food school so I am around food all day long. I have four children, three of which have already flown the coop so to speak but I still have my 'baby' at home. (He's 21). I am lucky in that I have my summers off so I spend a lot of time trying new recipes and catching up on my reading. I also play soccer in a ladies league to stay in shape.
