  1. In a small bowl, combine mushrooms, tomatoes, cilantro, shrimp, lemon juice and salt. Mix Well.
  2. Wash spinach and remove tough stems.
  3. In steamer or microwave, cook spinach until wilted. Drain and Dry well.
  4. Warm tortilla on stove or in microwave. Place on plate.
  5. Place spinach on top of tortilla, then add shrimp mixture.
  6. Roll it up and serve.
