Sicilian-Style Toasted Quinoa

  • In a small bowl, combine sun-dried tomatoes and boiling water.
  • Let stand until softened, about 20 minutes.
  • (Timing may very depending upon dryness of tomatoes.) When softened, thinly slice.
  • In large nonstick skillet, heat 1 tablespoon of oil over medium heat.
  • Add onion and garlic, and cook, stirning frequently, 5 minutes or until onion is lightly browned.
  • Add Swiss chard, sprinkle with 1/4 teaspoon of salt, and cook, stirring frequently, 5 to 7 minutes or until chard is tender.
  • Meanwhile, in large nonstick skillet, heat remaining 1 tablespoon oil over medium heat.
  • Add drained quinoa and cook, stirring constantly, 5 minutes or until lightly golden.
  • Add 4 cups water, pepper, and remaining 1/2 teaspoon salt and bring to a boil.
  • Reduce to a simmer, cover, and cook 12 to 15 minutes or until quinoa is tender.
  • Transfer mixture to a large bowl.
  • Stir in sunflower seeds, raisins, Parmesan, Swiss chard mixture, and sun-dried tomatoes.
  • Toss with a fork to combine.

  1. We love trying new ways to make quinoa and really liked the chard in this. We omitted the raisins. I'm not sure why, but I liked it better without the parmesan cheese. I think pine nuts would be great in this too.
     
  2. This was SO VERY GOOD ~ I made especially for DH, as he LOVES quinoa. But I must say, for me, the flavor combination was outstanding, and the different textures in the mix made for a very satisfying meal ~ I especially enjoyed the sunflower seeds! Made for HOLIDAY TAG, October 2009!
     
  3. We are on a quest to try new foods so I picked this recipe to try quinoa and swiss chard. Of course could I find quinoa in our store LOL I had to sub couscous . We did like this and can't wait to try it with the quinoa. We did find it a tad plain but it went perfectly with a chicken dish that had a ton of flavours. It actually helped tone down that dish LOL Made for Everyday is a Holiday Tag
