Siesta Fiesta Pie

"This is from a book called "Make Ahead Meals". The Siesta Fiesta comes from being to rest if you already had it made in your freezer! You can combine all of the ingredients except cheese and cornbread mix and freeze in a large freezer bag. When you are ready to fix it, thaw it and go from there!"

  • Combine all ingredients except cornbread and cheese.
  • Pour into a 2 quart casserole dish.
  • Preheat oven to 375 degrees.
  • Prepare cornbread according to mix and spread over meat mixture.
  • Sprinkle with cheese and bake 30 to 40 minutes until cornbread is done and meat is bubbly.

  1. I liked the flavor, but it was a bit watery at the bottom. DH didn't like the cornbread on top. (Not a TRUE Southerner.) I would leave out the olives for my fam's taste next time, but it was good.
     
  2. Had for dinner the other night. My husband did not like it(doesn't care for mexican flavor. Gave some leftovers to my brother, he loved it. I made my own enchilada sauce recipe # 12877).

  4. This was great! Super easy and very tasty. Served with sour cream. We used ground turkey instead of beef, and I used a can of black beans instead of olives. I also omitted the salt. I put the cheese under the cornbread which made it seem doughy, even though it was fully cooked. Next time maybe I'll follow the directions :) *Updated* I actually put this all together in a pan, and froze it uncooked, cornbread and all. I baked it from frozen in a 325 oven for about an hour and 15 mins and it came out perfect!
     
  5. This was great. I took it to a potluck and it went over well. I only made some minor changes. I used shreaded chicken instead of beef. I reduced the amount of onions and olives, and i placed the cheese between the chicken and cornbread instead of on top of the cornbread. Very good.

I am a working mom of a beautiful little girl Keira Lynn. Watching her grow has been such a joy! My husband and I were married in May of 2006 on the beautiful island of Kauai.
