ingredients
- 1 lb lean ground beef, browned
- 1 onion, chopped
- 1 clove garlic, minced
- 1 (19 ounce) can enchilada sauce (I use Las Palmas Original)
- 1 can small ripe pitted olive
- 1 teaspoon salt
- 1 tablespoon chili powder
- 1 package cornbread mix (Jiffy is a good one)
- 1 cup shredded cheddar cheese
directions
- Combine all ingredients except cornbread and cheese.
- Pour into a 2 quart casserole dish.
- Preheat oven to 375 degrees.
- Prepare cornbread according to mix and spread over meat mixture.
- Sprinkle with cheese and bake 30 to 40 minutes until cornbread is done and meat is bubbly.

This was great! Super easy and very tasty. Served with sour cream. We used ground turkey instead of beef, and I used a can of black beans instead of olives. I also omitted the salt. I put the cheese under the cornbread which made it seem doughy, even though it was fully cooked. Next time maybe I'll follow the directions :) *Updated* I actually put this all together in a pan, and froze it uncooked, cornbread and all. I baked it from frozen in a 325 oven for about an hour and 15 mins and it came out perfect!
