  • Preheat oven to 375 degrees. Lay bacon in a single layer on a rimmed baking sheet and cook until crisp, about 15 to 20 minutes. Drain on paper towels. Cool and rinse the pan.
  • Line the baking sheet with foil. Trim the root ends of the scallions, halve lengthwise, and chop into about 1-inch pieces.
  • Lay out the bread on a work surface and butter 1 side of each piece. Put 4 slices of the bread, buttered side down, on the prepared baking sheet. Layer half of the cheese slices on the bread. Layer the bacon and scallions on top of the cheese and cover with the remaining cheese. Top with the remaining slices of bread buttered side up and bake until each bottom pieces of bread is golden brown, about 10 minutes. Flip the sandwiches and bake until the other side is golden brown and the cheese has melted, about 8 to 10 minutes more.

  2. What is not to love about this sandwich? These three ingredients are the best combination. I bought some good quality sourdough bread for these sandwiches. I love green onions but don't add too many because it will over power the sandwich. Yum! PAC Spring 2001
     
  3. Delicious! This was made using Recipe #218694 for the bread and the cheddar cheese was a sharp cheddar. The sandwich was cooked in a convection oven and browned nicely on top and bottom during the first 10 minute period. It was flipped and cooked maybe an additional 5 minutes. Made for *PAC Spring 2009*

In recent years, however, I've discovered how to enjoy the LOVE and pure enjoyment of cooking. It's now a big part of who I am, as corny as that may sound! It has also trickled down and become a joy and a real treat for my family as well... they love everything I make, and are my best critics. They enjoy eating what I make as much as I enjoy making it! My daughter loves the fact that I cook so well and she brags about it to all her friends, which is really cute. I have a long way to go before I can really call myself an accomplished cook (in fact, I don't know If I'll ever be able to call myself that! We'll see...). But my family sure has a lot of faith in my. Time will tell if I become what my family already believes I am. :o)
