Simple Baked Oatmeal (Lower Fat)

"Recipe from a friend that I tweaked for our needs. If you don't have the oat bran or flax, just use another 1/2 C oats."

  • Preheat oven to 350°. In a medium bowl, mix the sugar, oil, applesauce, eggs, vanilla, milk and water.
  • In a separate bowl, mix the oats, oat bran, flax, baking powder, salt and cinnamon.
  • Add the dry to the wet, mix thoroughly, then fold in the chocolate chips or fruit, if using.
  • Pour into a greased 9x13 pan and bake for 35-40 minutes, until golden on the edges.

  1. Oh my, but this is yummy! I made this at the request of my 16 year old son (and oatmeal-head, I guess there are worst vices). SOOOOOO GOOD! Not too dense, not too sweet. Just perfect. I also tried some warmed with a little milk, might be even better that way. I am glad that I found something that my DH can grab on his way to work and I don't have to worry too much about fats and such. I made it as written but left out the fruit/chocolate chips, and I didn't have the oat bran, so I used an extra 1/4 cup oats. Thank you so much for this recipe, I will use it often ;0)

I am a Christian wife and mother of 3 kids. Since my DH's high cholesterol, we've been eating better. I never used to like cooking. Since eating better, I've liked learning and preparing new recipes. My kids haven't reconciled themselves to the new eating yet. I grind my own grain and make all my own breads.?Working 2 hours a day in the local high school lunch room.??I am homeschooling my high schooler.? ?Also found out 1 child has multiple food allergies (wheat, dairy, tomato, chocolate, etc) and another is gluten sensitive. So, we just started (July 09) eating gluten and dairy free. I've been busy with getting our house market ready, even though it's not the best time for that.?
