Simple Cake Filling

1 cake
ingredients
- 1 (3 1/2 ounce) box instant vanilla pudding or (3 1/2 ounce) box chocolate instant pudding
- 3⁄4 cup whole milk
- 1⁄2 pint heavy cream (1/2 pt is equal to 1 cup)
- 1 teaspoon vanilla extract
directions
- Mix all ingredients together until thick. Place in refrigerator until it sets. Spread filling on cake & layer. *Note, cake MUST be completely cooled*.
- You can also put sliced peaches or bananas on top of filling before sealing with the cake. This filling makes cakes so tasty! Be sure to use imagination with pudding & cake flavors and enjoy! Just Remember, this filling is milk and heavy cream based so you must keep cool and/or refrigerated.

This is my go-to filling, it is simply amazing, so tasty, and so quickly and easily made. It always turns out awesome, it has just right consistency to be able to spread it easily and not have it bleed on the sides of the cake. I read that someone couldn't get it thick after whipping for a long time, and they mentioned that the pudding box asked for heating the milk. What you had probably wasn't instant pudding, which is asked for in this recipe. Instant pudding doesn't require the milk to be boiled/heated, and is quickly and easily made with cold milk. I just made this to fill my son's 1st birthday cake. I used french vanilla pudding and it is AMAZING. I used half and half instead of whole milk, and heavy whipping cream. It was very pretty, like a thick mousse. It really held it's form so I was able to pile it on...I looove a good filling. My family couldn't keep their spoons out of bowl!

I joined RZ in 2007 while home on maternity leave after my son was born. I admit, I had no clue how to cook or what to cook! My Mom (who is 100% Italian) and my Grandmother who also lives with my Family did all of the cooking so I never did it or learned. Everyone I knew just went crazy for the dishes that my Mom or Grandma made and being in my 30's I was a bit embarassed to admit, I had no idea how to cook like they do. I decided to experiment with cooking on my own and this site is absolutely my favorite for recipes! By Nov 2008 my second child, a daughter was born. She was born disabled so I am now a full time home Mom and I have to admit, cooking is now something that helps soothe me, gets me through difficult times and something that I just enjoy so much and just 2 years ago, never knew how! I have RZ to thank and all it's wonderful members who share recipes! I eventually would like to gather more of my Mom & Grandmother's recipes and share them with all of you!
